It’s a great month for (new) vegetarians and some meat eaters. Impossible Foods debuted the “bleeding veggie burger” at NYC’s Momofuku Nishi. The veggie burger goes further than Beyond Meats’ “Beyond Burger. Instead of using beet juice for the bloody effect, the “blood” is plant heme, an iron-rich molecule that carries oxygen. Heme is found in every living organism, it makes your blood red and turns meat pink. Impossible Foods selects proteins and nutrients from greens, seeds, and grains to recreate a guilt free meat/cheese-eating experience.
If this burger becomes mainstream and more people convert to a vegan/vegetarian lifestyle, meat can be made with 95% less land, 74% less water, 87% less greenhouse gas emissions AND without hormones or antibiotics. The next stop for the Impossible Burger is in San Francisco, CA. Hopefully, Miami is next.
